Now, the first thing you may be wondering is, what is a “Highland Coo”? Good question! If you’re unfamiliar with the breed, the Highland is a Scottish breed of rustic cattle. A traditional breed of western Scotland, the Highland is hardy. With its long, shaggy, wooly reddish-brown coat, the Highland does well in cold weather and is thus able to withstand the intemperate conditions of the region.
